Would you believe me if I told you that this seasonal treat is sugar-free, dairy-free, gluten- free? It’s true! This a clean recipe and Keto-friendly.
I am currently on a reverse diet from my last show, last weekend, so I try to be creative with my meal plan to keep it fresh and exciting. We all have cravings and mine is always for something sweet. I want to enjoy the holidays and all the holiday flavors without ruining all the progress I’ve made in the last year. So, in my attempt to maintain a clean, nutritious lifestyle, I came up with this idea using only 3 Key ingredients: Eggs/egg whites, oatmeal, and pumpkin purée. You don’t even have to add the purée if you can’t afford the carbs, Pumpkin Spice is enough to do the trick. The purée is just for a moist texture.
For more protein, you can add 1 scoop of Vanilla whey isolate protein powder.
Pumpkin Spice Waffles/Mini Donuts
Prep Tim:e: 10 minutes
Cook Time: 10 minutes
1 Tbsp Pumpkin Purée
1 whole egg
1-2 Tbsp Sugar Free Maple Syrup
1 tsp Pumpkin Spice
1 Tbsp Swerve Brown Sugar Substitute
1 tsp Baking Powder
1/4 tsp Xanthan gum
1 tsp melted coconut oil (optional)
1-3 Tbsp Cashew Plain, Unsweetened yogurt
1 tsp Vanilla or Pumpkin Pie extract
1/2 cup Swerve powdered Sugar Substitute
Throw all wet ingredients into bowl/Bullet.
Add dry ingredients into bowl/Bullet.
Scoop the batter into waffle or mini donut iron until done. They should be “toasty” or golden brown on the outside when done.
Take out and let cool.
Make the icing- mix together icing ingredients and pour on top of waffles/mini donuts, or dip!
Add a little extra Pumpkin Spice.
Top Waffles with One whole egg, cooked as desired.
